Food Recipe of the Month: June 2010
Mardi Gras Tilapia with Mango Chutney
Serves 6
6 Tilapia Filets, Fresh
1 c Yellow Corn Chips, Crushed Very Fine
1 c Blue Corn Chips, Crushed Very Fine
Mango Chutney (see recipe below)
4 Tbsp Major Grey's Chutney
Press fish into corn chip mixture. Place in refrigerator for 1/2 hour.
Prepare mango chutney (see recipe below).
Preheat oven to 375°. Place fish on baking pan. Bake for 8-10 minutes.
On stovetop, add the following to a cooking pot: mango chutney mixture and Major Grey's Chutney. Cook until reduced.
Pour over baked fish and bake for 5 minutes.
Serving suggestion: Serve with rice and your favorite vegetable.

Chutney Recipe
2 c Mango, Diced
2 oz. Peach Schnapps
In a clean bowl, add diced mango and peach schnapps. Stir. Set aside
Drink Recipe of the Month: June 2010
Peach-A-Rita
8 oz. Peach Schnapps
8 oz. Tequila
2 oz. Lime Juice
Add ingredients into a blender. Fill with ice and blend.
Pour into your favorite glass and garnish with fresh peach slice.
Enjoy.
